Roast Potatoes

Cooking time: 1 hr

SERVES: 6-8

Ingredients

-1.5k Maris piper Potatoes.
-100g goose fat.
-50g sunflower oil.
-50g unsalted butter.
-2 bay leaves.
-2 sprigs of Rosemary.
-4 cloves of garlic.
- Salt (to taste)
- Pepper (to taste)

Method

-First peel & chop your potatoes Then Blanche in salted water with the bay leafs for 8-10 minutes, take out and place in a sieve to steam dry.
-In the meantime get a thick roasting tray for your sunflower oil and goose fat. Places into 190° oven for 10 minutes to preheat.
-When the potatoes have stop steaming take the tray out of the oven and pour the potatoes into the hot fat, baste well and return to the oven for 15 to 20 minutes.
-After 15 to 20 minutes turn your potatoes and baste again then back in for the same time.
-Crush your garlic & Ready your rosemary and butter, take the potatoes out of the oven, place the ingredients inside then back in for five minutes. Now you can leave on the side to reheat later or enjoy straight away.
-Add a generous pinch of salt and pepper then serve.
