Devilled Eggs

Ingredients

  • 12 eggs

  • 4 tbsp mayonnaise

  • 2 tsp English mustard

  • ¼ tsp smoked paprika

  • tabasco (to taste)

  • 2 tbsp extra virgin olive oil

  • 1 small bunch chives (finely sliced)

  • Salt & pepper (to taste)

  • 24 large black olives

Method

  • Boil your eggs for 12 minutes before cooling in iced cold water. Then peel immediately.

  • Cut your eggs in half, the gently remove the yolks and place into a mixing bowl. lay out your Egg white halves on serving dishes.

  • Add the mayo, English mustard, salt, pepper and paprika, to the yolks and mix well. Stir in the tabasco & oil then mix again. If you like your mix extra smooth you can do this with a hand blender. Check you are happy with the seasoning, correcting if needed.

  • Spoon a little of your yolk mixture into each egg white half. Cut each black olive in half, then slice 1 of the halves into strips (spiders legs). Place the olive halves on your eggs with the olive strips creating your spooky spiders. Sprinkle with paprika and chopped chives, serve … and enjoy!
