Devilled Eggs

Ingredients
12 eggs
4 tbsp mayonnaise
2 tsp English mustard
¼ tsp smoked paprika
tabasco (to taste)
2 tbsp extra virgin olive oil
1 small bunch chives (finely sliced)
Salt & pepper (to taste)
24 large black olives
Method
Boil your eggs for 12 minutes before cooling in iced cold water. Then peel immediately.
Cut your eggs in half, the gently remove the yolks and place into a mixing bowl. lay out your Egg white halves on serving dishes.
Add the mayo, English mustard, salt, pepper and paprika, to the yolks and mix well. Stir in the tabasco & oil then mix again. If you like your mix extra smooth you can do this with a hand blender. Check you are happy with the seasoning, correcting if needed.
Spoon a little of your yolk mixture into each egg white half. Cut each black olive in half, then slice 1 of the halves into strips (spiders legs). Place the olive halves on your eggs with the olive strips creating your spooky spiders. Sprinkle with paprika and chopped chives, serve … and enjoy!
