Ingredients

  • 300g canned tuna, drained

  • 75g mayonnaise

  • 50g chopped red onion

  • 50g chopped celery

  • 50g chopped radish

  • 25g chopped fresh parsley

  • 2x chopped green jalapeños

  • 20g hot sauce

  • Salt and pepper to taste

  • 4 slices of bread

  • 200g grated cheese (such as cheddar or mozzarella)

  • extra mayo for spreading

Method

  • In a bowl, mix together the tuna, mayonnaise, red onion, radish, jalapeños, celery, parsley, hot sauce, salt, and pepper until well combined. Preheat your oven to 200°C (400°F).

  • Spread mayonnaise, on one side of each bread slice. Divide the tuna mixture evenly and spread it onto the mayo side of two bread slices. Sprinkle grated cheese over the tuna mixture.

  • Place the remaining bread slices on top, mayo side facing outwards. Heat a non-stick pan or griddle over medium heat.

  • Place the sandwiches in the pan and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

  • Transfer the sandwiches to a baking sheet and place them in the preheated oven for 2-3 minutes to ensure the cheese is fully melted. Remove from the oven, let them cool for a minute, and then slice diagonally.

  • Serve hot and enjoy your delicious tuna melts!
