Special Fried Rice

Serves: 4
Ingredients
300g of long-grain rice
30g of vegetable oil
1 onion, finely chopped
20g ginger, finely chopped
2 cloves of garlic, sliced
2 large eggs, lightly beaten
100g of spam, finely diced
1 large carrots, finely chopped
100g of cooked and peeled prawns
100g of frozen peas, thawed
4 spring onions, thinly sliced
30g of light soy sauce
1 teaspoon curry powder
30g sesame oil
A good pinch of Ground white pepper
Method
-Cook the rice according to the package instructions, then spread out on a tray to cool completely.
-Heat the oil in a large wok or frying pan over medium-high heat. Add the onion , carrot and garlic, then stir-fry for 2 minutes until the onion has softened slightly.
-Push the vegetables to one side of the pan, then pour the beaten eggs into the other side. Stir the eggs until they're lightly scrambled.
-Add the cooked spam & prawns to the pan, then stir-fry for another 2-3 minutes until the meat is heated through.
-Add the cooled rice to the pan, breaking up any clumps with a spoon. Stir everything together well, then cook for another 2-3 minutes until the rice is hot.
-Finally, add the spring onions, peas,, curry powder, soy sauce, white pepper and sesame oil. Stir well to combine, then cook for another minute until everything is well coated in the sauces.
-Taste, then add more soy sauce if needed. Serve immediately. Enjoy your special fried rice!
