Puran Poli

Cooking time: 1 hour

Serves: 4-6

Ingredients

For the Dough:

- 250g whole wheat flour

- 1tsp ghee (clarified butter)

- A pinch of salt

- Water as needed

For the Sweet Filling (Puran):

- 250g chana dal (split Bengal gram)

- 250g jaggery (gur), grated

- 1/2tsp cardamom powder

- A pinch of nutmeg powder

- Ghee for greasing and cooking

Method

For the Sweet Filling (Puran):

- Wash the chana dal thoroughly and soak it in water for about 1 hour. After soaking, drain the water and transfer the dal to a pressure cooker.

- Add enough water to the pressure cooker to cover the dal. Cook the dal until it becomes soft and mushy. It usually takes about 3-4 whistles on medium heat.

- Once the dal is cooked, drain any excess water and transfer it to a pan. Add grated jaggery to the pan and cook on low heat until the jaggery melts and blends well with the dal, forming a thick mixture.

- Add cardamom powder and nutmeg powder to the mixture. Mix well and cook for a few more minutes until the mixture thickens further and starts to leave the sides of the pan.

- Remove the pan from heat and let the mixture cool completely. Once cooled, divide the mixture into small portions and shape them into balls. Set the sweet filling (puran) aside.

For the Dough and Assembling:

- In a mixing bowl, combine the whole wheat flour, ghee, and a pinch of salt. Gradually add water and knead the mixture into a soft and smooth dough. Cover the dough with a damp cloth and let it rest for about 30 minutes.

- After the resting period, divide the dough into small portions and shape them into balls.

- Take one portion of the dough and flatten it with your hands. Place one portion of the sweet filling (puran) in the center of the flattened dough.

- Bring the edges of the dough together to cover the sweet filling completely, shaping it into a stuffed ball.

- Roll out the stuffed ball gently into a circular shape using a rolling pin and some dry flour.

- Heat a tawa or griddle over medium heat. Place the rolled puran poli on the hot tawa and cook until brown spots appear on one side. Flip it over and cook the other side as well.

- Apply ghee on both sides of the puran poli while cooking to make it soft and flavorful.

- Once cooked, remove the puran poli from the tawa and repeat the process with the remaining dough and sweet filling.

- Serve the warm and delicious Puran Poli with a dollop of ghee or enjoy it as is.
