Broccoli & Stilton Soup

Cooking time: 25 mins

Serves: 4

Ingredients

- 1l Veg Stock

- 2 Broccoli Heads

- 100g Stilton

- 250g Creme Fraiche

- 50g Cheddar Cheese

- 1 White Onion

- 50g Walnuts

- 1 small bunch parsley

- 1 tbsp butter

- Salt & Pepper to taste

Method

- Cut your broccoli into chunks (the stalk and all), and peel & slice your onion.

- In a large saucepan, sweat the onion in the butter until translucent. Once you reach this point, add the broccoli with a pinch of salt & pepper and cook with a lid on for 5 minutes.

- Add the stock, bring to the boil, then simmer for 10 mins or until the broccoli is fully cooked through.

- Blend the soup with the cheddar, stilton, and half of the creme fraiche. Check the seasoning and correct if needed.

- Serve your soup with a spoon of creme fraiche, crispy walnuts and fresh parsley … enjoy!
