Ingredients

-1 chicken crown

-30g sunflower oil

-30g butter

-1 sprig of thyme.

-1 sprig of rosemary.

-1 bulb of garlic. 

-50g whiskey. 

-200g cream. 

-50g wholegrain mustard. 

-flake salt and cracked black pepper.

Method

- Season your chicken crown well all over and leave to rest on the side to come up to room temperature for around 45 minutes.

- In a hot pan, add a little sunflower oil and roast all over until golden brown. Then add your butter & aromatics and based until the bones are opaque, and the aromatics are pungent.

- Roast in 120°C oven for about 45 minutes until you have an internal temperature of 62°, then take out and rest for 10 minutes until the new carve. 

- In the meantime, slice the rest of your garlic and sauté in a pan with butter and oil, then Flambé your whiskey add your cream and mustard then reduce until you have your desired consistency. Serve together and enjoy.
