Crushed Potatoes with Blue Cheese Dip

Serves: 4

Ingredients

  • 1kg baby potatoes

  • One small plush of the following herbs, Rosemary, thyme, mint.

  • Flake salt & cracked black pepper.

  • 50g Sunflower oil.

  • 50g Butter.

  • A good pinch of the following spices, garlic powder, cumin, smoked paprika & cinnamon.

  • 6 to 8 clothes of cracked garlic.

  • 200g of Greek yoghurt.

  • 100g of blue cheese.

  • 2g dried oregano.

  • 20g apple vinegar.

Method

-Place your baby potatoes, herbs, half your garlic, Flaked salt and cracked black pepper. Bring to the boil and simmer for 20 minutes then leave on the side in the water to cool for another 20 minutes. 

-Smash your potatoes with the bottom of a pan and place on an oiled baking tray and roast for 40 minutes at 180° turning occasionally. 

-Mix together, your yoghurt, crumbled blue cheese, dried oregano, a touch of garlic powder, and apple vinegar. 

-Place to butter and remaining aromats onto the roasting tray with the potatoes and roast for a further five minutes. Sprinkle with your spice, then dish up and enjoy your crispy spiced smash potatoes with blue cheese dip.
