Sticky Ribs & Corn

Cooking time: 45 mins

SERVES: 4-6

Ingredients

-2 racks of ribs.
-5g Curry powder
-5g smoked paprika
-5g garlic powder
-2g cracked black pepper
-2g allspice
-5g coriander.
-5g salt.
-1 bottle of large - I-soon-reach or carib If you know….
-200g ketchup
-20g soy
-20g Worcestershire sauce
-20g honey
-100g guava juice.
-2 corn
-100g butter.

Method

-Peel the skin off of your racks then dust generously with your spices saving some back for the spice butter and the barbecue sauce.
-place your ribs in a deep tray pouring in your bottle of beer, cover with tinfoil and cook in a 160° oven for one hour and 20 minutes.
-In a pan boil together your ketchup, soy, honey, spices and Worcestershire sauce. Then pour in the juice from the ribs and reduce until thick and sticky.
-Bring your butter to a foaming stage and pour over the rest of your spices.
-Switch on your grill and lather your barbecue sauce over the ribs, grilling and glazing about 3 to 4 times.
-Boil the corn for eight minutes in salted water then serve with your ribs, a bunch of coriander and a cut line.
