Fish Finger Sandwich

Ingredients

-400g white fish fillet of your choice.
-100g flour.
-2 eggs.
-200g panko.
-Flaked Salt & Pepper.
-100g Mayonnaise.
-30g Capper berries chopped.
-30g gherkins chopped.
-30g chopped parsley.
-1 lemon.
-1 avocado.
-2 slices of bread.
-spray oil.
-30g butter.

Method

-Cut your fish into fingers, season well with salt and pepper then toss in the flower egg and Panko breadcrumbs. Lay on a baking tray and spray lightly with oil, bake in the oven at 180° for 10 to 12 minutes.
-Mix your mayo with the capers, gherkins, and chopped parsley. Add the zest of half a lemon season well with salt and pepper.
-Fry one side of your bread slices of both of your bread slices. Slice your avocado and seasoned with salt, pepper, lemon zest and juice. Then build your fish finger sandwich balls with lashings of your gherkin mayonnaise.
