Ham, Egg & Chip Butty

SERVES: 2

Ingredients

-4 slices of your favourite bread.
-6 slices of your favourite ham.
-4 eggs.
-30g Butter.
-100g Mayo.
-20g Parsley, Chopped.
-50g Gerhkins, Chopped.
-25g Wholegrain Mustard.
-25g Dijon Mustard.
-Flacked Salt & Cracked Black Pepper.
-3 Chipper potatoes.
-30g sunflower oil.

Method

-Cut your chips & wash thoroughly with cold water, dry with a cloth and place into a metal bowl. Douse with oil, give them a good toss and Layout on a baking tray. Roast in 180° oven for around 25 to 30 minutes.
-Mix together your mayonnaise, mustard, chopped parsley, chopped gherkin, salt and pepper. And set aside for the building of your sandwich.
-Once the chips are cooked take out of the oven and seasoned thoroughly, then set aside ready for building your sandwich.
-In a medium size nonstick frying pan place your butter and bring up to a gentle foaming stage. Cracking your eggs and slowly fry until fully cooked. Seasoned generously with salt and pepper, then start to build your sandwich.
-The order in which you build your sandwich is completely up to you, but I go bread, gherkin and mustard mayo, chips, ham, egg, gherkin and mustard mayo and then the lid on top.
-with this recipe you should make two Hoofin sandwiches, a great dinner time treat. enjoy.
