Ingredients

- 125g Extra Virgin Olive Oil

- 2 Lemons (Zest & Juice)

- 30g White Wine Vinegar

- 5g Sugar

- 5g Salt

- 1g Ground Black Pepper

- 1 Garlic Clove (crushed)

- 1 Thyme Sprig

Method

- In a large bowl, whisk all the ingredients together until thick and emulsified.

- Adjust the seasoning as needed.

- Store in an air-tight container in the fridge.

Use this dressing on salads, green veg, Roast chicken, fish, roast potatoes… or even on your eggs & avocado toast. - Enjoy!
