Classic Tabbouleh

Ingredients
- 30g Bulgar wheat
- 60ml Water (boiling)
- 1 bunch Flat leaf parsley (chopped)
- ½ bunch Mint (finely chopped)
- 1 Red onion (finely chopped)
- 2 Plum tomatoes (chopped)
- 2 Lemons (zested & juiced)
- 4 tbsp Extra virgin olive oil
- Salt & Pepper (to taste)
Method
- Put the bulgar wheat in a bowl and pour the boiling water over the top. Leave to absorb for 15 minutes.
- Once absorbed, fluff up the wheat with a fork, then add all your remaining ingredients.
- Mix well and taste to ensure you are happy with the seasoning before serving.
- This salad really comes alive after about 20 minutes, when the flavours have married together.
This salad is fantastic with lamb, fish & chicken. It’s also great in pittas & wraps.. enjoy!
