Zabaglione

Ingredients
- 4 Egg yolks (keep a shell)
- 4 tbsp Caster sugar
- Marsala
Method
- Put the egg yolks and sugar in a bowl and whisk until fluffy.
- Add 4 half-egg shells of Marsala
- Place over a Bain-Marie but make sure the boiling water doesn’t touch the bowl.
- Whisk over the boiling water for 5 minutes until the volume has increased 3 fold.
- You will be left with a sweet, fluffy and creamy zabaglione. Ladle straight away into glasses or bowls and serve with sponge fingers or whole cherries. Enjoy!
