Quick Pickles (Quickles)

SERVES: 8

Ingredients

- 1/2 x Cucumber

- 1 x White Onion

- 1/4 x White Cabbage

- 1 x Green Jalapeño

- 10g Dill

- 100g White Vinegar 

- 200g Water

- 10g Coriander Seeds

- 10g Onion Seeds

- 10g Fennel Seeds

- 10g Cumin Seeds

- 30g Sugar

- 10g Salt

Method

- Finely slice the cucumber, onion, cabbage & jalapeño. In a bowl, mix together with the herbs & spices. Then place in a sterilised glass jar.

- Boil the water, vinegar, salt & sugar. Then immediately pour over the sliced vegetables until the jar is full. 

- Leave  on the side to cool. Once cool, close the jar and refrigerate until needed.
