Sticky BBQ Ribs

Ingredients

- 1.5 kg pork ribs (baby back or spare ribs)

-300g American mustard.

-200g Apple juice.

-100g apple cider vinegar.

- 300g Stubbs barbecue sauce

- 60g Maple Syrup 

- 15g soy sauce

- 15g apple cider vinegar

- 5g Worcestershire sauce

- 2 cloves garlic, minced

- 8g smoked paprika

- 3g ground cumin

-3g ground coriander

-2g ground allspice 

- Salt and freshly ground black pepper, to taste.

Dry Rub:

- 100 g light brown sugar

- 30 g smoked paprika

-30g garlic powder

- 30g onion powder

- 5 g ground cumin

- 5 g ground coriander

- 30g salt

- 30g corse ground black pepper

-2g dried oregano

-4g dried basil

-1g ground cinnamon

Method

-In a small bowl, combine all dry rub ingredients. Mix well and set aside.

-Remove the membrane from the back of the ribs. Brush the ribs with your mustard, then Season the ribs generously with the dry rub, making sure to cover all sides. Wrap the ribs in plastic wrap on a tray and refrigerate for at least 2 hours, or overnight for better flavor.

-Preheat your BBQ to 130°C for indirect cooking. Make sure to add a drip tray filled with water under the cooking grate to catch drippings and maintain moisture.

-Remove the ribs from the refrigerator and let them sit at room temperature for 30 minutes. Place the ribs bone-side down on the cooking grate, close the lid, and cook for about 2 1/2 hours. During the cook, you should spray the ribs well once after 2 hours with the apple cider vinegar.

-once a 2 1/2 hours have passed place your ribs onto a bed of tinfoil lathered in some honey, brown sugar, apple juice, and a little more rub then repeat on the other side of the ribs. Wrap and place back on the smoker for another hour until the internal temperature of 90° has been reached, then rest for one hour.

-In a small saucepan, combine the barbecue sauce, honey, soy sauce, apple cider vinegar, Worcestershire sauce, minced garlic, smoked_ paprika, cumin, salt, and black pepper. Simmer on low heat for 10 minutes, stirring occasionally, until the sauce thickens.

-Slice & Serve with the barbecue sauce on the side for dipping. Enjoy!
