Ingredients

  • 2 slices of your favourite bread

  • 2 eggs

  • 50g Nduja

  • 1 clove of garlic

  • 1 white onion

  • 1 red pepper

  • 1 red chilli

  • 400g cherry tomatoes

  • Olive oil

  • Salt & Pepper to taste

Method

  • Chop your onion, garlic, chilli and pepper then set to one side.

  • On a medium heat, using a saucepan, cook your Nduja until melted then add your chopped vegetables. Stir occasionally until the onions become translucent before adding the cherry tomatoes and seasoning with salt and pepper.

  • Place a lid on the pan and leave to cook down to some saucy goodness. Check your happy with the seasoning, then pour your sauce into an oven safe pan and create 2 small wells using a spoon.

  • Crack an egg into each well, season each egg the bake in the oven until the egg whites are fully cooked (keep your yolk runny, it’s the best bit!).

  • Coat your bread slices in olive oil before grilling until slightly chard.

  • Remove the eggs and fondue from the oven, leave to cool for a few minutes then using your toast, scoop up and dig in!
