Carne Asada Tacos

SERVES: 4-6

Ingredients

-1kg skirt steak
-1 white onion thinly sliced
-50g light soy.
-50g neutral oil.
-6 cloves of garlic.
-1 bunch of coriander
-100g lime juice.
-100g orange juice.
-1 dried chipotle.
-3g cumin.
-3g smoked paprika.
-3g dried orengano.
-5g salt.
-2g black pepper.
-100g cotija cheese.
-1/2 white onion.
-3 lime.
-12 corn tacos.
-1/2 red onion.
-2 avocados.
-1 tomato.
-1 green jalapeños.

Method

-Blend together your garlic, neutral oil, orange juice, lime juice, dried Chipotle, Cuman, smoked paprika, dried oregano, salt, black pepper, and light soy in a blender.
-Finally chopped your coriander and slice your onions, mix with your Bavette steak and marinade then set aside for a minimum of six hours turning after three hours.
-Dice your white onion and mix with chopped coriander and set aside for later.
-Finally chop your red onion, tomato, green jalapeño together in a bowl and smash in your avocado, lime juice and a good pinch of salt and pepper.
-Preheat your oven and char your marinated steak on both sides at high heat for 3 to 4 minutes then flash in a 250° oven for 4-6 minutes then rest and Carve.
-Char off your taco shells, build and enjoy.
