Satay Chicken Skewers

Ingredients
- 500g boneless, skinless chicken breasts
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 tablespoons lime juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- Salt and white pepper to taste
For the peanut sauce:
- 100g peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 clove garlic, minced
- 1/2 teaspoon chili flakes
Method
-Cut the chicken breasts into small, bite-sized pieces and set aside.
-In a bowl, whisk together the soy sauce, vegetable oil, lime juice, honey, minced garlic, ground turmeric, ground coriander, ground cumin, chili powder (if using), salt, and pepper.
-Add the chicken pieces to the marinade and toss to coat evenly. Let the chicken marinate for at least 1 hour, or overnight for best flavor.
-Preheat the barbecue grill to medium-high heat.
-Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
-Place the skewers on the preheated grill and cook for about 4-5 minutes per side, or until the chicken is cooked through and slightly charred.
-While the chicken is grilling, prepare the peanut sauce. In a small saucepan, combine the peanut butter, soy sauce, lime juice, honey, minced garlic, and chili flakes. Add water gradually to achieve your desired consistency.
-Serve the grilled chicken satay skewers with the peanut sauce on the side.
