Ingredients

-1kg Chicken thigh, boneless & skinless. Diced

-1 onion, diced

-2 bay leaves

-100g gee.

-4 cloves of garlic sliced

-20g ginger sliced

-3 Tomatoes sliced

-20g tomato paste

-7g salt

-5g madras curry powder

-5g paprika

-5g ground coriander

-5g Garam masala

-5g cumin seed

-5g coriander seed

-5g black onion seed

-25g coriander chopped

-25g mint chopped.

Method

- Massage all the ground spices into the chicken and leave to marinade.

- On a medium heat, caramelise the onion, ginger and garlic before adding the black onion seeds, cumin seeds and coriander seeds. Cook for a few more minutes before adding the sliced tomatoes.

- Once the tomatoes are cooked through and have given their juice to the pan, pour in the chicken and tomato puree. Cook with the lid on, stirring occasionally until fully cooked.

- Finish with the chopped herbs, adjust the seasoning with salt and pepper.. serve, and ENJOY!
