Sticky Braised Red Cabbage Wedges

Cooking time: 2 hrs

Serves: 4-6

Ingredients

-1x Red cabbage.

-350g Red wine.

-500g Cranberry juice.

-2x Cinnamon sticks.

-3x Star anise.

-4x Cloves. 

-30g Ginger.

-1x Orange.

-100g Caster sugar.

-Flaked sea salt & cracked black pepper.

-20g Sherry vinegar.

Method

-Cut your cabbage into wedges and season with salt & pepper. Leave to absorb for 20 minutes on a tray.

-In the meantime, boil together, the rest of your ingredients and set aside.

-Place your wedges onto a tray or flat casserole dish with a lid, then pour over your spiced liquid, cover and bake in the oven at 160c for an hour and a half.

-Your wedges should now be soft, and the liquor in the pan reduced and sticky.

-You can convert these onto a separate tray ready for reheating or dig in straight away.
