Ingredients

- 2 Chicken Breasts

- 1 Small Bunch of Parsley (Finely chopped)

- 2 Sprigs of Thyme

- 2 Lemons

- 2 Cloves of Garlic (Sliced)

- 250g Green Beans

- 1 White Onion (Sliced)

- Salt & Pepper (to taste)

- 2 tbsp Crème Fraîche

- 4 tsp Olive Oil

Method

- Pre-hear your oven to 180ºc.

- Bring an oven proof pan to a medium-High heat, and add half the olive oil. Season your chicken breasts with salt, then brown until fully golden.

- Add the onion & garlic, and continue to cook until the onion is translucent.

- Now turn off the heat, add fresh thyme and the zest & juice of 1 lemon, and stir well.

- Coat your green beans in the other half of your olive oil, season well, and place in the same dish with the chicken. Slice your 2nd lemon, and add the slices to the dish too.

- Roast for 20mins until the chicken is fully cooked, and the beans are slightly browned. Then add the crème fraîche, parsley and a generous pinch of black pepper.

- Stir, serve.. and enjoy!
