Chicken Chow Mein

Ingredients
- 500g Egg Noodles (cooked & drained)
- 500g Chicken Breasts (cut into strips)
- 4 Spring Onions (finely sliced)
- 1 Carrot (finely sliced)
- 1 Red Pepper (finely sliced)
- 4 Garlic Cloves (finely sliced)
- 5 tbsp Soy Sauce
- 5 tbsp Oyster Sauce
- 3 tbsp Rice Wine Vinegar
- White pepper (to taste)
- 1 tsp Sugar
- 10g Cornflour
- Cooking Oil
Method
- In a small bowl, mix the cornflour and soy sauce together until fully combined, then add the rice wine vinegar & oyster sauce. Set aside.
- This really is all about high temperature, and fast cooking in order to achieve a slight char, which gives that traditional Chow Mein flavour. So make sure your pan/wok is nice and hot, add a splash of cooking oil to coat the pan, then add the chicken strips, spring onions (keep a little back for garnish), carrot & red pepper. Cook on a high heat for 3-4mins, tossing continuously.
- Add the garlic, and the sauce you set aside earlier, stir and cook for a 2-3 minutes. When everything has thickened, pour in the drained egg noodles, give it a good stir on a high heat then serve with a sprinkling of spring onion on top.. enjoy!
