Cooking time: 20 mins

Serves: 2 - 4

Ingredients

- 500g Prawns (de-shelled & de-veined)

- 2 Red Chillies (Sliced)

- 1 Lemon (Zest & Juice)

- 1 small bunch parsley (Chopped)

- 1 small bunch dill (Chopped)

- 1 small bunch Chives (Chopped)

- 2 tbsp Honey

- 1 Shallot (Sliced)

- 2 Garlic Cloves (sliced)

- Salt & Pepper to taste

- 1 tsp Cooking oil

Method

- Bring a large frying pan or skillet to a medium-high heat. Add a little cooking oil, then pour in your chopped shallot and half the chopped chilli.

- Cook for a few minutes with a big pinch of salt & pepper, whilst stirring continuously.

- Then pour in all the prawns and garlic, turn the heat up slightly and cook until the prawns are just pink.

- Add the lemon zest, juice, parsley, dill, chives & honey. Give this a good stir until everything is combined and the prawns are slightly sticky from the honey.

- Check you are happy with the seasoning, then serve with the 2nd half of your sliced chilli sprinkled on top for extra spice.
