Smoked Masala BBQ Chicken

Serves: 4-6
Ingredients
-1.5kg chicken pieces - thighs, drumsticks &/or wings.
-3g coriander seeds.
-3g cumin seeds.
-3g fennel seeds.
-3g cardamom.
-2g cloves.
-2g chilli flakes.
-1/2 nutmeg.
-3g cinnamon.
-2g black peppercorns.
-5g salt.
-5g sugar.
-1 onion.
-6 garlic, cloves.
-3 red chillies.
-20g ginger.
-50g sunflower.
-300g barbecue sauce.
-30g apple vinegar.
-10g dark soy.
Method
- Firstly, toast your spices, and then blend with the salt and sugar. Massage the dry rub into the chicken leave to marinate for at least four hours.
- Set your barbecue up for smoking indirect heat. Then smoke your chicken at 150°C for at least 45 minutes. Continue to cook, as desired.
- In the meantime blend together your ginger, chilli, onion, garlic and Oil then cookout for 20 minutes on a low heat in a pan.
- Once the mix is sweet and fragrant then add your barbecue sauce, apple vinegar, and dark soy. cookout for a further five minutes.
- Toss this in with your chicken and enjoy.
