Marbled Brownies

Ingredients

For the chocolate mixture

- 225g Plain chocolate

- 85g Butter

- 4 x Eggs

- 300g Sugar

- 140g Plain flour

- 2.5g Salt

- 5ml Baking powder

- 10ml Vanilla extract

- 115g Walnuts, chopped (optional)

- Butter for greasing

For the plain mixture

- 55g Butter, room temperature

- 170g Cream cheese

- 100g Sugar

- 2 x Eggs

- 30g Plain flour

- 5ml Vanilla essence

Method

- Preheat the oven to 180c/350f/Gas mark 4.

- Line a 33 x 23cm tin with greaseproof paper and grease it with butter.

For the chocolate mixture

- In a bain-marie, melt the chocolate and butter over a gentle heat, stirring constantly.

- Set aside to cool slightly. Meanwhile, in a mixing bowl, beat the eggs until light and fluffy.

-  Gradually add the sugar and continue to beat. Once fully combined, sift over the flour, salt and baking powder and fold to combine.

- Stir in the cooled chocolate mixture, add the vanilla essence and walnuts and stir.

- Weigh 450ml of this mixture into a jug and keep the rest separate.

For the plain mixture

- Cream the butter and cream cheese with an electric mixer until combined. Add the sugar and continue to beat until blended.

- Then beat in the eggs, flour and vanilla extract.

For Baking

-  Spread the unmeasured chocolate mixture in the tin.

-  Pour over the plain mixture, then drop spoonfuls of the 450ml chocolate mixture on top.

-  With a metal palette knife or spoon, swirl the mixtures together to create a marble effect. (Do not blend completely!).

- Bake for 25- 35 minutes until just set.

- Turn out when cool and cut into squares for serving - Enjoy!
