Brown Bread Rolls

Cooking time: 2hrs

SERVES: 8 -12 (depending on how big you like your rolls).

Ingredients

- 400g Malted Grain Brown Bread Flour
- 100g Strong White Bread Flour
- 7g Dried Yeast
- 7g Salt
- 320g Water

Method

- Mix all the ingredients in a bowl with a wooden spoon until it forms a rough ball.
- Tip the mix out onto your bench and kneed with the palm of you hands for 5 minutes.
- Transfer back into the bowl and cover with cling film tightly for 20 minutes (30mins on a cold day).
- Repeat twice more: kneed, cover, prove, kneed, cover, prove.
- Then shape into rolls and prove for a final 20 minutes or until risen by a third.
- Dust each roll with flour, and score each top.
- Preheat your over to 220°c with a tray inside for the bread.
- Place a pan of boiling water on the bottom of the oven to create steam while your bread is cooking.
- Then place your bread onto the hot tray and cook for approximately 20mins. (You can check if the bread is cooked by tapping the bottom of your bread - it should sound hollow).
