Cooking time: 15 mins

SERVES: 4-6

Ingredients

- 300g Frozen Garden Peas (defrosted)

- 1 Lemon (zest & juice)

- 3 tbsp Tahini

- 1 Garlic Clove

- 1 tin Chickpeas

- 3 tbsp Extra Virgin Olive Oil

- 1 small bunch of Parsley

- Salt & Pepper (to taste)

Method

- Blend the garlic, lemon zest, juice and chickpeas together in a food processor until smooth. Add a little water if needed to help the mixture blend.

- Add the remaining ingredients and blend again. (quickly if you like bites of crushed peas, longer if you like a smooth texture).

- Season with a good pinch of salt & pepper, blitz once more. And check you are happy with the seasoning.

- Serve in a bowl with a drizzle of extra virgin olive oil on top an a pinch of black pepper.

- This is great with warm, toasted flatbreads, roasted lamb, or even with your eggs on toast… Enjoy!
