Sticky Braised Red Cabbage

SERVES: 6-8

Ingredients

- 1 red onion.
-1 Pink Lady Apple.
-1 red cabbage.
-2 star anis.
-50g dried cranberries.
-700g red wine.
-700g port.
- Salt (to taste)
- Sugar (to taste)
- Pepper (to taste)
- Red wine vinager (to taste)

Method

-Finely slice your apple, onion, and red cabbage. Then sweat lightly in a medium sized saucepan for 5 to 10 minutes.
-At this stage add the rest of your ingredients, give a quick stir and cook with a lid on for 45 minutes on a medium heat.
-When you have a thick, rich and jammy consistency set aside, Adjust seasoning if needed, and serve.
