Ham & Cheese Croquettes

SERVES: 4

Ingredients

-1x onion.
-50g butter.
-50g flour.
-300g Milk.
-200g ham.
-150g grated cheese.
- panne set up flour, beaten egg, blitzed breadcrumbs.
-500g sunflower oil.

- Romesco Sauce to serve

Method

-Thinly slice your onion and sweat in a pan with your butter and a good pinch of salt, once the onion is translucent add to your flour and cook out for five minutes. Add your milk gradually as you beat the mixture and stretch out the lumps. Add salt, pepper, ham, cheese and mix in together, spread onto a tray cover with clingfilm and chill in the fridge for a minimum of three hours.
-Divide your mix into balls and set up your panne. Heat your oil to 160° then add your panned balls and fry for 2 to 3 minutes. When hot out of the fryer season with salt, serve with Romesco sauce and enjoy.
