Ingredients

-60g Mayo
-40g ketchup
-5g Tabasco
-5g Worcestershire sauce
-2 lemons
-5g smoked paprika
-Flacked sea-salt & Cracked pepper
-50g cognac
-400g cleaned raw prawns
-selection of soft herbs
-1 Cos lettuce washed

Method

-Mix together in a bowl your mayonnaise, ketchup, zest from one lemon and juice from one lemon, most of your smoked paprika, a good flicker of salt and pepper, your Tabasco sauce and Worcestershire sauce.
-In a separate bowl mix your prawns, zest from the other lemon, salt and pepper, cognac and a glug of olive oil.
-Take a nonstick medium-size pan and get it very hot. Then pour in your prawns and ignite with a lighter, burn until the flames have stopped and the liquid is reduced. Then pour out onto a tray and set aside.
-Slice your coz lettuce in half and segment your lemons, then build on a round white plate finishing with your soft herbs.
