Ingredients

-6 chicken thighs.
-1 chorizo log.
-1 onion.
-1 red pepper.
-400g cherry tomatoes.
-1 tin chopped tomatoes.
-1 tin cooked chickpea.
-2 cloves of garlic.
-Flacked salt& cracked black pepper.
-2g fennel seeds.
-2g cumin seeds.
-2g onion seeds.
-2g ground coriander.
-2g smoked paprika.
-2g garlic powder.
-1 red chilli.
-1g chilli flakes.

Method

-Caramelise your chicken thighs skin side down in a medium skillet for 7-8 minutes with a lid on. Season well, When Golden Brown remove from the pan And set aside.
-chop your chorizo, onion and garlic and sauté in the same pan for five minutes, then add your spices and cook for one minute. Next in goes your pepper, chilli and cherry tomatoes, stir well then cook with a lid on a medium heat for 20 minutes until the tomatoes have broken down and created a sauce.
-once cooked out Pour in your strained chickpeas and tin tomatoes then cook for 10 minutes, place your chicken thighs on top and bake in 160° oven for 25 -35 minutes.
-serve and enjoy.
