Ingredients

-1/2 onion. (sliced)

-1 potato. (sliced)

-1 clove of garlic. (minced)

-4 eggs.

- 200g Manchego Cheese (grated)

-Flaked sea salt & Ground black pepper.

-chopped chives.

- Cooking Oil.

Method

- Place plenty of oil in a nonstick oven-safe pan and slowly fry the onion & potato with a good pinch of salt & pepper on a very low heat for about 10 to 15 minutes.

- Once lightly golden and tender, add your eggs, garlic, manchego and black pepper. (no salt at this stage). Give it a good stir, then gently shake the pan until everything is level. Fry on a high heat for two minutes then place in the oven for 8 to 10 minutes at 160°. When cooked through, pry away from the pan & flip onto a serving board. Garnish with freshly sliced chives, and enjoy!
