Dark Chocolate & Almond Torte

Ingredients
- 200g Dark chocolate (chopped)
- 4 Medium Eggs (separated)
- 175g Caster sugar
- 1 tsp Vanilla extract
- 250g Ground almonds
- 200g Icing sugar (for dusting)
Method
- Preheat your oven to 180ºc.
- Melt the chocolate & butter in a bain-marie.
- In a separate bowl, Beat the egg yolks with the sugar until light and pale. Fold in the ground almonds and chocolate mix.
- Whisk the egg whites to soft peaks, then gently fold into the chocolate mixture.
- Line a 24cm cake tin with greaseproof paper and pour in the mix. Bake for 35-40 minutes until slightly firm to the touch.
- Allow to cool, then turn out and dust with the icing sugar. Serve with a spoonful of mascarpone, and enjoy!
