Sweet & Sour Salmon

Ingredients
- 600g Salmon (skinless & diced)
- ½ tsp Salt
- 1 tbsp Cornflour
- Vegetable oil for deep frying
For the sauce
- 1 tbsp Vegetable oil
- 4 Garlic cloves, chopped
- 2 Onions, cut into wedges
- 2 Red chillies, cut into strips
- 2 pieces Ginger, sliced into strips
- 400ml Water
- 3 tbsp Tomato sauce
- 2 tbsp Chilli sauce
- 1 tbsp Sugar
- ¼ tsp Salt
- 1 Cucumber (seeds removed and diced)
- 2 Tomatoes (Chopped)
- 1 ½ tbsp Cornflour (mixed with 1 tsp water into a slurry)
- 2 tbsp Water
- ½ tbsp Plum sauce
- 5g Sesame seeds (for garnish)
- 1 small bunch Coriander, chopped (for garnish)
- 2 spring onions, sliced thinly (for garnish)
Method
- Rub the Salmon with salt and cornflour until evenly coated.
- Heat your veg oil in a deep saucepan and once hot, place the fish in and fry for 10 minutes until cooked & crispy. Drain and reserve on a paper towel to absorb excess oil.
- In a large, deep frying pan or wok, heat 1 tbsp oil, then add the garlic, onion, chilli and ginger.
- Fry for 2-3 minutes on a high heat, then add the 400ml of water, tomato sauce, chilli sauce, sugar & salt. Bring to the boil, then add the cucumber, tomatoes and cornflour slurry to thicken.
- Lastly, once your sauce is thickened, stir in the plum sauce, then toss in your fried salmon right before serving.
- Serve with steamed rice, or chips if you’re being naughty! garnish with coriander, spring onions and sesame seeds… then enjoy!
