Soda Bread

Serves: 6

Ingredients

- 250g Plain flour

- 250g Brown flour

- 50g Oats

- 3 tbsp Wheat germ

- ½ tsp Salt

- 1 ½ tsp Bicarbonate of soda

- 350ml Buttermilk

Method

- Preheat your oven to 180ºc. Then place all the dry ingredients in a large bowl and make a well in the middle.

- Pour in the buttermilk and mix until you acheive a dough. Shape the dough into a circle and cut a cross on the top. Then pierce each quarter of the loaf with a knife. This allows the dough to expand and cook evenly in the oven.

- Place on a baking tray and bake at 180ºc for about 50 minutes, until the bread is golden brown and it sounds hollow when you tap the bottom.

- Leave to cool slightly, carve, and serve with lashings of salted butter.
