Peach & Tomato Salad

Serves: 2

Ingredients

- 4 Peaches (stoned & thickly sliced)

- 4 Heirloom tomatoes (thickly sliced)

- 1 Sprig of Oregano (stalks removed)

- 1 Small bunch of Basil (picked)

- 20 x Toasted Pecans

- 1 Burrata, pulled into pieces (goat’s cheese & feta also work well here).

- 2 tsp White Balsamic

- 1 tsp Honey

- 5 tbsp Extra Virgin Olive Oil

- Salt & Black Pepper

Method

- Place your white balsamic, honey & Extra Virgin Olive Oil into a large mixing bowl with a big pinch of salt & black pepper. Whisk together for a minute or 2 until you have a dressing.

- Add the peach slices, tomatoes, pecans & herbs (keep some leaves back for garnish) into the bowl and gently toss to coat your salad in that beautiful dressing.

- Check you are happy with the seasoning (tomatoes love salt). Then serve in a large serving bowl.

- Tear pieces of burrata on top of the salad, top with basil & oregano leaves, a light drizzle of extra virgin olive oil, and a pinch of black pepper.. enjoy!
