Ingredients

-500g Beef mince. 20%
-3g Coriander Seed.
-3g Cumin Seed.
-1/2 Stick of Cinnamon.
-2 Star Anis.
-2 Chipotle Chillis.
-2g hot Smoked Paprika.
-2g Dried Oregano.
-1 Red Onion, Diced.
-1 Red Pepper, Diced.
-4 Cloves of Garlic, Sliced.
-50g tomato purée.
-2 Tins Chopped Tomatoes.
-50g Dark Chocolate or 10g Coca Powder.
-5 Glugs of Worcestershire Sauce.
-1 Tins Kidney Beans, Drained.
-2 Jalapeños, Sliced.
To Serve- White Rice, Sour Cream, Grated Cheddar, Toasted Tortillas, Chopped Coriander.

Method

-toast of your whole spices, then grind together with your powdered spices & dried herbs, set aside.
-in a large chef, pan heat the oil on a high temperature. add your mince beef and a good pinch of salt and pepper, caramelise until golden brown.
-add onions, red peppers, and garlic then soften on a medium heat for 10 minutes.
-Add tomato paste and Cook out for five minutes, stir in your tin tomatoes and Worcestershire Sauce then slowly bubble away for 2 hours.
-add your kidney beans, then serve with your accompanying components.
