Black Pudding Scotch Eggs

SERVES: 4

Ingredients

-200g Black Pudding, Diced.
-800g Sausage Meat.
-10 large Eggs.
-300g Bread Crumbs.
-300g Plain Flour.
-3 Eggs.
-Flacked Sea Salt & Cracked Blackpepper.
-2l Sunflower Oil.
-Red or Brown Sauce.

Method

-mix together, your black pudding and sausage meat, then set aside.
-Place a large pan of boiling water onto the stove and blanch Your six large eggs for 6 minutes & 30 seconds. plunge immediately into ice water and peel immediately, then Place back into the ice water, set aside in the fridge once cooled fully in the ice water.
-wrap your eggs in the 100g of the sausage & black pudding meat, then panae in the flour Beaten eggs and breadcrumbs. Place back into the fridge for 30 minutes while you preheat your oil to 165°C.
-fry for 7 minutes seconds until golden brown.
-serve with red or brown sauce.
