Red Onion Chutney

Cooking time: 2 hrs

SERVES: 10

Ingredients

- 1kg Red Onions (finely sliced)

- 4 cloves of garlic (finely sliced)

- 50g butter

- 100g soft brown sugar

- 1 Bay leaf

- 2 sprigs of thyme

- 350ml bottle red wine

- 100ml Red Wine vinegar

- 350ml Port

Method

- In a heavy-bottomed saucepan on a medium heat, melt the butter before adding all the onion & garlic. Cook for 5 mins before adding the sugar, thyme & bay leaf. Give everything a good stir and cook for 45 mins until thick, sticky & caramelised.

- Pour in the wine, vinegar & port, then reduce on a medium-high heat until the mixture is thick & sticky once again.

- Check you are happy with the seasoning, then store in sterilised jars for up to 1 month in the fridge.

This is the perfect pairing for a cheese sarnie, pâté, or even in your sausage rolls.. enjoy!
