Bacon & Beef Dripping Roast Potatoes

Cooking time: 1 hr

Serves: 4-6

Ingredients

-1kg Roasting potatoes 

-100g streaky bacon

-4 Cloves of garlic

-100g butter

-3 sprigs of rosemary

-3 sprigs of Thyme

-3 bay leaves

-100g beef fat

-flaked Sea salt & cracked black pepper

Method

-Firstly, peel your potatoes and cut into good size chunks, then boil with half of your herbs, garlic, a good pinch of salt and pepper for 8-10 minutes.

-In the meantime, Place your bacon and beef fat onto a tray and roast in the oven at 180° until golden brown and crispy around 10 minutes, then remove the bacon and set aside.

-drain your potatoes and let steam for a couple of minutes before putting them into the hot fat and continuing to roast, turning every 20 minutes for around one hour.

-Drain some of the fat from the potatoes and add the rest of your herbs, garlic and crushed up bacon give a good toss with some salt and pepper then serve.
