Caprese Pasta Salad

Ingredients

- 300g pasta (farfalle, fusilli, or penne)

- 250g cherry tomatoes, halved

- 200g fresh mozzarella, cubed or small mozzarella balls (bocconcini)

- 30g fresh basil leaves, chopped or torn

- 15g fresh parsley, chopped

- 60g extra virgin olive oil

- 30g balsamic vinegar

- 1 garlic clove, minced

- 10g honey

- Salt and pepper, to taste

Method

-Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process and cool it down.

-In a large mixing bowl, combine the cooked pasta, halved cherry tomatoes, mozzarella, basil, parsley, and mint leaves. Toss gently to mix the ingredients.

-To prepare the dressing, in a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper until well combined.

-Pour the dressing over the pasta salad and toss gently to coat everything evenly.

-Refrigerate the Caprese style pasta salad for at least 30 minutes to allow the flavors to meld together.

-Before serving, give the pasta salad a gentle stir and adjust the seasoning if needed. Enjoy your fresh and herbaceous Caprese style pasta salad as a side dish or a light meal!
