Spiced Potato Wedges

Ingredients

- 1 kg roasting potatoes (e.g., Maris Piper or King Edward)

- 2 tbsp olive oil

-2 cloves garlic

- 1 tsp smoked paprika

- 1 tsp garlic powder

- 1 tsp onion powder

- 1/2 tsp cayenne pepper (adjust to taste)

- 1/2 tsp ground cumin

- 1/2 tsp dried oregano

- Salt and black pepper, to taste

Method

-Preheat your barbecue to a medium-high heat or preheat your oven to 200°C (400°F) if you're using an oven.

-Wash the potatoes thoroughly and pat them dry. Cut each potato into thick wedges, leaving the skin on for extra texture and flavour.

-In a large bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, ground cumin, dried oregano, salt, and black pepper.

-Add the potato wedges to the bowl and toss them until they are evenly coated with the spice mixture.

-If using an oven, place the wedges in a single layer on a large baking tray lined with parchment paper. Bake for 35-40 minutes, turning the wedges halfway through, until they are golden and crispy.

-Remove the potato wedges from the heat and let them cool for a few minutes before serving. Enjoy your spicy potato wedges with a side of sour cream, ketchup or your favourite dipping sauce!
