Summer Herb Salad

Ingredients
- 200g mixed salad greens (e.g. rocket, radicchio, Torn romaine.)
- 30g fresh basil leaves, Picked.
- 30g fresh mint leaves, Picked.
- 30g fresh parsley leaves, Picked.
- 20g fresh cilantro leaves, Picked.
-10g Tarragon, Picked.
-10g Oregano, Picked.
- 40g toasted pine nuts.
- 40g crumbled feta cheese.
Dressing:
- 45ml extra virgin olive oil.
- 30ml Balsamic.
- 10g white wine Vinegar.
- 1 garlic clove, minced.
-20g Sugar.
- Salt and pepper, to taste
Method
-In a large salad bowl, combine the mixed greens, basil, mint, parsley, cilantro, Tarragon & Oregano.
-In a small bowl, whisk together the olive oil, Balsamic, White Wine Vinegar, minced garlic, sugar, salt, and pepper until well combined and emulsified.
-Drizzle the dressing over the salad and toss gently to combine.
-Top the salad with toasted pine nuts and crumbled feta cheese, if desired.
-Serve immediately and enjoy your refreshing Summer Herb Salad!
