Ingredients

- 4 large egg whites

- 250 grams of caster sugar

- 5g of cornflour

-1 vanilla pod

- 300g of heavy cream

-30g icing sugar

- Fresh fruits (such as berries, kiwi, or passion fruit) for topping

Method

-Preheat the oven to 110°C and line a baking tray with parchment paper.

-In a clean, dry mixing bowl, whisk the egg whites, sugar & cornstarch until the mixture becomes thick and glossy.

-Spoon the meringue mixture onto the prepared baking tray, shaping it into a round or individual nests.

-Place the tray in the preheated oven and bake for 1.5 to 2 hours, or until the pavlova is crisp on the outside and soft on the inside. Avoid opening the oven door during baking.

-Once baked, remove the pavlova from the oven and let it cool completely on the tray.

-In the meantime, whip the heavy cream with the vanilla pod and Sugar until it reaches soft peaks.

-Carefully transfer the cooled pavlova onto a serving plate and fill the center with whipped cream.

-Top the pavlova with an assortment of macerated fresh fruits, such as berries, kiwi, or passion fruit.
