Ingredients
-1 Cucumber.
-1 Red Onion.
-4 Tomatoes.
-1 Green Bell Pepper.
-100g Feta.
-50g Kalamata olives.
-A Good Pinch of Dried Oregano.
-Flaked Salt & Cracked Black Pepper.
-50g Extra Virgin Olive Oil.
-30g red wine vinegar.
-10g Mint.
-10g Parsley.
Method
-firstly, chop your cucumber, red onion, tomato and bell pepper.
- mix together with your crumbled feta, pitted olives and the rest of the ingredients, it is important to dress this salad last minute to keep the flavours and textures, fresh and vibrant.
