French Omelette

Cooking time: 30 mins

SERVES: 1

Ingredients

- 4 eggs

-1 tsp butter

-1 tsp olive oil

-Salt & Pepper to taste

-Parmesan to finish

-Truffle oil to finish (optional)

-5 leaves Parsley to finish

Method

-Crack the eggs into a bowl and whisk until fully combined. We don’t season at this stage as the salt will break down the structure of the egg.

-Bring your pan to a medium heat and add the olive oil and butter. Once foaming, pour in the whisked eggs and stir continuously until you start to see ribbons of cooked egg.

-Season with salt and pepper and slowly turn out your omelette.

-Finish with a grate or two of Parmesan, a drizzle of truffle oil, black pepper and parsley… dig in, and enjoy!
