Ingredients

-175g Soft Unsalted Butter + 25g for Greasing.
-175g Sugar.
-3 Large Eggs.
-175g Self Raising Flour.
-1 Lemon, Zested.
-75g Golden Syrup. More for drizzling.
-200g Clotted Cream.

Method

-place your 1L pudding basin into the fridge for 30 minutes, once chilled brush on your 25 g of softened butter and pour in your in your75 g of golden syrup swilling around the surface to cover evenly.
-Cream together, the remaining butter, zest of a lemon and sugar until light and fluffy, then continue to beat as you gradually add your eggs, finally folding in your flour.
- Pour the mixture into your greased basin and cover with a pleated greased layer of greaseproof paper and tinfoil as per the video. Tie to secure then microwave at 600 W for 10 minutes, Leave to rest for two minutes before turning out serving with a good drizzle of golden syrup and a good dollop of clotted cream.
