Beef Tartare

Cooking time: 30 mins

SERVES: 4

Ingredients

- 500g Beef Steak (finely chopped or ground)

- 20g Cornichons (finely chopped)

- Bread (of your choice) 6 thin slices

- 1 small bunch of Parsley (finely chopped)

- 1 small bunch of Chives (finely sliced)

- 1 Egg Yolk

- 1 tsp Dijon Mustard

- 1 tbsp Capers (finely chopped)

- 1 tbsp Shallot (finely chopped)

- 3 tbsp Olive Oil

- 1 tsp Worcestershire Sauce

- Cayenne Pepper to taste

- Salt (to taste)

Method

- Place the bread slices on a backing tray and drizzle with olive oil. Place another baking tray on top and bake in the oven at 170ºc for 8-12mins (or until golden brown). Sprinkle with salt & pepper while they are still hot then leave to cool.

- Finely chop and slice all your herbs, capers, shallot & cornichons before mixing together with the yolk, Dijon mustard, olive oil, Worcestershire sauce, salt and cayenne.

- Gentle fold the beef into the mixture, taking care not to break up the beef too much. Check you are happy with the seasoning, then serve with your crispy croutons.
