Ingredients

- 7 Large Egg Whites
- 165g of Dark 70% Chocolate

Method

- Snap your chocolate into chunks and place in a heat proof bowl over a pan of simmering water. (Ensure the water does not touch the bottom of the bowl)
- Leave until melted, stirring occasionally.
- In a separate bowl, whisk your egg whites to stiff peaks.
- Now the fun part… QUICKLY whisk your chocolate into your egg white until full incorporated. Now is the time you can add any flavourings you like: grate some orange zest, or a splash of your favourite liquor, flakey sea salt is a lovely touch!
- pour your mousse into the fanciest glasses you have for an adult treat, or even fill some egg cups if it’s for the kids. You can also add a spoonful of jam, peanut butter, biscoff, or caramel to the bottom of the glass.
- Leave to set in the fridge for 3hrs

Feel free to add a splash of your favourite liquor to this, or fruit for the kids (the mousse sets well in egg cups, and theres no added sugar!). But a simple sprinkle of flaky sea salt is sometimes the best.
